How to make it
- Beat the softened cream cheese and butter together in a large bowl until smooth and creamy.
- Mix in the vanilla extract and the pinch of salt.
- Gradually add the confectioners' sugar, beating after each addition, until a thick, stiff dough forms.
- Fold in the shredded coconut until evenly distributed, then cover and chill the mixture for about 30 minutes to firm up.
- Scoop out small portions and roll them between your palms into little potato-shaped ovals, roughly 3 cm long.
- Roll each piece in the ground cinnamon until fully coated so they resemble small potatoes.
- Arrange on a tray and refrigerate for at least 1 hour to set before serving, and keep any leftovers chilled.
