How to make it

  1. Whisk the flour, instant yeast and fine salt together in a large bowl, then pour in the lukewarm water and two tablespoons of olive oil and mix to a wet, shaggy dough.
  2. Cover the bowl and let the dough rest for 10 minutes, then stretch and fold it over on itself a few times in the bowl; repeat this folding two or three more times at 10 minute intervals.
  3. Cover and leave to rise at room temperature for 1 to 2 hours until roughly doubled and full of bubbles.
  4. Generously oil a baking tray with two tablespoons of oil, tip the dough in, and gently stretch it toward the corners without deflating it completely; let it rest 20 to 30 minutes more.
  5. Drizzle the surface with the remaining oil, press your fingertips deep all over to make the classic dimples, and scatter with rosemary and flaky sea salt.
  6. Bake at 220Β°C for 20 to 25 minutes until deep golden and crisp on top, then transfer to a rack and cool slightly before cutting so the crumb sets.
