How to make it
- Whisk the flour, instant yeast and fine salt together in a large bowl, then pour in the lukewarm water and two tablespoons of olive oil and mix to a wet, shaggy dough.
- Cover the bowl and let the dough rest for 10 minutes, then stretch and fold it over on itself a few times in the bowl; repeat this folding two or three more times at 10 minute intervals.
- Cover and leave to rise at room temperature for 1 to 2 hours until roughly doubled and full of bubbles.
- Generously oil a baking tray with two tablespoons of oil, tip the dough in, and gently stretch it toward the corners without deflating it completely; let it rest 20 to 30 minutes more.
- Drizzle the surface with the remaining oil, press your fingertips deep all over to make the classic dimples, and scatter with rosemary and flaky sea salt.
- Bake at 220Β°C for 20 to 25 minutes until deep golden and crisp on top, then transfer to a rack and cool slightly before cutting so the crumb sets.
