How to make it

  1. Bring a large pan of water to a steady simmer and set up a steamer, or place a trivet in a deep pot, ready for the pudding.
  2. In a bowl, mix the self-raising flour, suet, sugar and salt, then beat the egg into the milk and add gradually, stirring to form a soft but not sticky dough.
  3. Turn the dough onto a floured surface and roll it into a rectangle roughly 20 by 25 cm and about 1 cm thick.
  4. Spread the jam evenly over the dough, leaving a 2 cm border clear all around so it does not leak out during cooking.
  5. Starting from a short edge, roll the dough up loosely into a log, pinch the ends to seal, then wrap it in greaseproof paper and foil, leaving room for expansion, and twist the ends tightly.
  6. Steam the wrapped roly-poly over simmering water for about 1 hour 30 minutes, topping up the water as needed so the pan never boils dry.
  7. Unwrap carefully, allowing the steam to escape away from you, then slice thickly and serve hot with custard or cream.
