Takikomi Gohan

How to make it
- Rinse the rice in several changes of cold water until the water runs nearly clear, then drain in a sieve for at least 15 minutes.
- Thinly slice the shiitake, cut the carrot into fine matchsticks, pour boiling water over the aburaage to remove excess oil before slicing it into thin strips, and cut the chicken thigh into small bite-size pieces.
- Place the drained rice in a heavy pot or rice cooker, add the dashi, soy sauce, mirin, and sake, and gently stir once to combine, taking care to keep the rice in an even layer.
- Scatter the chicken, shiitake, carrot, and aburaage evenly over the surface without stirring them in, so the rice cooks cleanly underneath.
- Cover and cook on a rice-cooker mixed setting, or bring to a boil on the stove then reduce to low and cook covered for 12 to 13 minutes until the liquid is absorbed and the chicken reaches 75 C.
- Let the pot rest covered off the heat for 10 minutes, then fluff gently with a paddle to fold the toppings through, season with a little salt if needed, and serve scattered with sliced scallions.
