Lamb Sausages and Grilled Potatoes

How to make it
- Scrub the potatoes and cut them into 1/2-inch thick slices, then parboil in salted water for about 6 minutes until just tender at the edges and drain well.
- Toss the drained potato slices with 2 tablespoons of olive oil and a pinch of iodised salt, then grill over medium-high heat for 4 to 5 minutes per side until crisp and marked with golden lines.
- While the potatoes grill, prick the lamb sausages and grill them over medium heat, turning often, for 12 to 15 minutes until browned all over and cooked through to an internal temperature of 74 C (165 F) with no pink remaining.
- Halve the cherry tomatoes, separate and wash the romaine leaves, then tear or chop the lettuce into bite-size pieces.
- In a small pan, melt the butter with the remaining tablespoon of olive oil and warm the cherry tomatoes for 1 to 2 minutes just until they soften slightly.
- Arrange the romaine on plates, top with the grilled potatoes and warm tomatoes, and season with iodised salt and black pepper.
- Rest the cooked sausages for 2 minutes, then lay them over the salad and potatoes and serve immediately.
