How to make it

  1. Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until the yolks and whites are fully combined and slightly frothy.
  2. Melt the butter in a large non-stick skillet over medium heat, then add the diced onion and cook for 3 to 4 minutes until softened and translucent.
  3. Add the diced ham and cook for 2 minutes to warm it through and lightly brown the edges, then stir in the diced tomato and cook for 1 to 2 minutes until it just begins to soften.
  4. Reduce the heat to medium-low and pour in the beaten eggs, letting them sit for a few seconds before gently stirring with a spatula to form soft curds.
  5. When the eggs are about three-quarters set but still glossy and slightly wet, scatter the grated mozzarella over the top and fold gently to melt it through.
  6. Continue cooking just until the eggs are fully set and no longer runny, with no visible liquid egg remaining, then taste and adjust the salt and pepper.
  7. Serve the scramble immediately while hot, ideally with warm bread or tortillas on the side.
