Latino Scramble

How to make it
- Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until the yolks and whites are fully combined and slightly frothy.
- Melt the butter in a large non-stick skillet over medium heat, then add the diced onion and cook for 3 to 4 minutes until softened and translucent.
- Add the diced ham and cook for 2 minutes to warm it through and lightly brown the edges, then stir in the diced tomato and cook for 1 to 2 minutes until it just begins to soften.
- Reduce the heat to medium-low and pour in the beaten eggs, letting them sit for a few seconds before gently stirring with a spatula to form soft curds.
- When the eggs are about three-quarters set but still glossy and slightly wet, scatter the grated mozzarella over the top and fold gently to melt it through.
- Continue cooking just until the eggs are fully set and no longer runny, with no visible liquid egg remaining, then taste and adjust the salt and pepper.
- Serve the scramble immediately while hot, ideally with warm bread or tortillas on the side.
