How to make it

  1. Peel the potatoes and grate them along with the onion on the coarse side of a box grater, alternating the two so the onion helps keep the potatoes from browning.
  2. Transfer the grated mixture to a clean kitchen towel and wring out as much liquid as possible, which is essential for crisp latkes.
  3. In a bowl, combine the squeezed potato and onion with the beaten egg, matzo meal, salt, and pepper, mixing until the batter just holds together.
  4. Heat the vegetable oil in a heavy skillet over medium-high heat until it shimmers and a shred of potato sizzles immediately when dropped in.
  5. Scoop heaping spoonfuls of the mixture into the oil and flatten each into a thin patty, frying 3 to 4 at a time without crowding the pan.
  6. Cook for about 3 to 4 minutes per side, until deeply golden and crisp, then transfer to a paper-towel-lined plate and sprinkle with a little extra salt.
