How to make it
- In a heatproof bowl, whisk together the whole eggs, egg yolks and sugar until smooth, then whisk in the lemon juice, lemon zest and a pinch of salt.
- Set the bowl over a saucepan of barely simmering water, making sure the base does not touch the water, to create a gentle double boiler.
- Cook the mixture, whisking constantly, for 8 to 10 minutes until it thickens enough to coat the back of a spoon and reaches about 170°F (77°C).
- Remove the bowl from the heat and whisk in the cold butter one tablespoon at a time, letting each piece melt fully before adding the next, until the curd is glossy and smooth.
- Pour the curd through a fine-mesh sieve into a clean bowl to catch the zest and any cooked egg, giving a silky texture.
- Press a piece of plastic wrap directly onto the surface of the curd to prevent a skin from forming, then chill in the refrigerator for at least 2 hours until fully set.
- Store the finished lemon curd in a sealed jar in the refrigerator and use within one week.
