How to make it

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest until evenly combined.
  2. In a separate bowl, whisk the buttermilk, eggs, melted butter, and lemon juice until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula just until no dry streaks remain; a few small lumps are fine and overmixing will make the pancakes tough.
  4. Let the batter rest for 5 to 10 minutes while you heat a griddle or large nonstick skillet over medium heat and lightly coat it with oil.
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle, spacing them apart, and cook for 2 to 3 minutes until bubbles form across the surface and the edges look set.
  6. Flip each pancake and cook for another 1 to 2 minutes until golden brown and cooked through in the center.
  7. Transfer to a warm plate and repeat with the remaining batter, then serve hot with butter and maple syrup or a dusting of powdered sugar.
