How to make it

  1. Heat the oven to 165 C (325 F) and position a rack in the centre. Grease a 23 by 13 cm loaf pan with butter, then dust it evenly with flour and tap out any excess.
  2. Whisk the cake flour, baking powder and salt together in a bowl and set aside.
  3. Beat the softened butter and sugar with an electric mixer on medium-high for about 4 minutes until pale and fluffy, then beat in the lemon zest.
  4. Add the eggs one at a time, beating well after each and scraping down the bowl, then mix in the lemon juice and vanilla; the batter may look slightly curdled, which is fine.
  5. On low speed, add the flour mixture in three additions alternating with the milk, beginning and ending with flour, and mix only until just combined to keep the crumb tender.
  6. Scrape the batter into the prepared pan, smooth the top, and bake for 55 to 65 minutes until golden and a skewer inserted in the centre comes out clean.
  7. Cool the cake in the pan for 15 minutes, then turn it out onto a wire rack and cool completely before slicing.
