How to make it
- Preheat the oven to 190 C and lightly butter four individual ramekins or ovenproof dishes.
- Unroll the puff pastry, cut it into four pieces, and line the base and sides of each ramekin, pressing it in and trimming the edges, then chill while you make the filling.
- Melt the unsalted butter and let it cool slightly, then finely grate the zest of the lemon and squeeze its juice.
- In a bowl, whisk the eggs with the caster sugar until pale, then whisk in the lemon zest and juice, the melted butter, the white wine, brandy and rose water until smooth.
- Divide the lemon filling between the pastry-lined ramekins, being careful not to overfill.
- Place the ramekins on a baking tray and bake for 25 to 30 minutes, until the pastry is golden and crisp and the lemon filling is fully set with only a slight wobble in the centre.
- Let the puddings cool for a few minutes so the filling firms up, then serve warm, dusted with a little extra caster sugar if you like.
