How to make it

  1. Preheat the oven to 175 C / 350 F and line a 20 cm square baking pan with parchment, leaving an overhang for lifting.
  2. Rub together the 1 cup flour, the 1/4 cup powdered sugar and the softened margarine until the mixture resembles coarse crumbs, then press it firmly and evenly into the base of the pan.
  3. Bake the crust for 18 to 20 minutes until pale golden at the edges, then remove it but keep the oven on.
  4. Whisk the eggs with the white sugar until smooth, then beat in the lemon juice, the lemon peel, the 2 tablespoons flour and the baking powder to make a thin filling.
  5. Pour the filling over the hot crust and return the pan to the oven for 20 to 22 minutes, until the centre is set and no longer wobbles.
  6. Cool the squares completely in the pan on a wire rack so the filling firms up fully.
  7. Lift out using the parchment, dust the top generously with powdered sugar, then cut into 16 squares with a clean knife and serve.
