How to make it

  1. Rinse the lentils, place them in a saucepan with the water or vegetable stock, bring to a boil then simmer for about 25 minutes until very tender, and drain off any excess liquid.
  2. Melt the butter in a skillet over medium heat and cook the onion, celery, grated carrot and garlic for 6 to 7 minutes until soft and any moisture has evaporated, then stir in the cumin and garlic salt.
  3. Mash about two-thirds of the cooked lentils in a bowl, then fold in the remaining whole lentils along with the sauteed vegetables for texture.
  4. Mix in the breadcrumbs and the beaten egg, season with salt and pepper, then let the mixture rest for 10 minutes so the crumbs absorb moisture and it firms up.
  5. Shape the mixture into 4 evenly sized patties, pressing them firmly so they hold together; if the mixture feels too wet, work in a little more breadcrumb.
  6. Heat the olive oil in a skillet over medium heat and cook the patties for about 4 minutes per side until deeply golden and crisp and heated through.
  7. Serve the burgers on toasted buns with your favorite toppings such as lettuce, tomato and a garlicky yogurt or tahini sauce.
