How to make it

  1. Cut the chicken breasts into bite-sized chunks and pat dry, then season with the salt.
  2. Beat the eggs with the milk in one bowl and place the flour in a second bowl, then dip each piece of chicken first in flour, then in the egg wash, and again in flour to coat.
  3. Heat the oil in a deep skillet to 175 C (350 F), then fry the chicken in batches for 4 to 5 minutes until golden brown and cooked through to an internal temperature of 74 C (165 F); drain on paper towels.
  4. For the gravy, bring the chicken broth and soy sauce to a simmer in a saucepan.
  5. Whisk the cornstarch with 2 tablespoons cold water, then stir it into the simmering broth and cook for 1 to 2 minutes until the sauce thickens to a glossy gravy.
  6. Thinly slice the green onions and toast the cashews in a dry pan for 2 to 3 minutes until fragrant.
  7. Arrange the fried chicken on a platter, pour the warm soy gravy over the top, and scatter with the toasted cashews and sliced green onions before serving with steamed rice.
