How to make it

  1. Warm the olive oil in a large saucepan over medium heat, add the diced onion and celery and cook gently for 6 to 8 minutes until soft and translucent, then stir in the garlic and cook for one minute more.
  2. Stir in the tomato paste and cook for 2 minutes until it darkens slightly, then sprinkle over the flour and stir for another minute to form a paste.
  3. Pour in the chicken broth gradually, whisking to keep the soup smooth, then bring it to a simmer and cook for 15 minutes so the base thickens lightly and the vegetables turn meltingly tender.
  4. For a velvety texture, carefully blend the soup until smooth with an immersion blender, then return it to a gentle simmer over low heat.
  5. Stir in the heavy cream and the chopped lobster meat and warm through for 3 to 4 minutes, taking care not to let the bisque boil once the cream is added.
  6. Finish with the lemon juice and chopped dill, then season to taste with salt and black pepper.
