Marzipan Cake

How to make it
- Heat the oven to 180 C (350 F) and grease and line a 20 cm round springform tin with baking paper.
- Beat the softened butter with the granulated sugar and vanilla sugar for several minutes until pale and fluffy, then beat in the eggs one at a time, adding a spoonful of the flour with the last egg to prevent curdling.
- Sift together the flour, baking powder and a pinch of salt, stir in the ground almonds, then fold this mixture gently into the batter until just combined.
- Spoon half the batter into the tin and smooth it level, spread the raspberry jam evenly over the surface leaving a small border, then spoon the remaining batter on top and smooth it out.
- Bake for 45 to 55 minutes, until risen and golden and a skewer inserted into the centre comes out clean, then cool in the tin for 10 minutes before turning out onto a rack to cool completely.
- Dust a work surface with icing sugar and roll the marzipan into a thin round large enough to cover the top of the cake.
- Brush the top of the cooled cake lightly with a little warmed jam, lay the marzipan over it and press gently to smooth, trim the edges, and finish with a dusting of icing sugar before slicing.
