How to make it

  1. Preheat the oven to 180 C and line a muffin tin with 8 to 10 paper cases.
  2. Coarsely grate the chilled marzipan, or chop it finely, so it disperses evenly through the batter.
  3. Beat the softened butter with the sugar until pale and creamy, then beat in the eggs one at a time followed by the milk.
  4. In a separate bowl whisk together the flour, fine oatmeal, baking soda and salt, then fold these dry ingredients into the wet mixture along with the grated marzipan until just combined; do not overmix.
  5. Divide the batter between the cases, filling each about two-thirds full, and scatter the flaked almonds over the tops.
  6. Bake for 20 to 25 minutes until risen and golden and a skewer inserted into the centre comes out clean.
  7. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
