How to make it

  1. Peel the sweet potatoes and cut them into evenly sized chunks about 4 cm across so they cook at the same rate.
  2. Place the chunks in a large pot, cover with cold salted water, bring to a boil, then reduce to a simmer and cook for 15 to 20 minutes until a knife slides through easily.
  3. Drain the sweet potatoes well and return them to the warm pot, letting them steam dry for a minute to drive off excess moisture.
  4. Add the butter, brown sugar, orange juice, cinnamon, nutmeg, and a good pinch of salt, then mash until smooth and creamy.
  5. Taste and adjust the seasoning, adding a little more salt to balance the sweetness or a splash more orange juice to loosen the texture if needed.
  6. Warm through over low heat for a minute if it has cooled, stirring so it does not catch, then serve hot.
