How to make it
- Heat the oven to 110 C (225 F) and line two baking sheets with parchment paper. Make sure your mixing bowl and whisk are completely clean and free of grease, as any fat will stop the whites from whipping.
- Separate the eggs carefully so that no yolk gets into the whites, then place the egg whites, cream of tartar and pinch of salt in the bowl and whisk on medium speed until soft, foamy peaks form.
- Increase the speed to high and add the sugar one tablespoon at a time, whisking well between additions, until the meringue is glossy, stiff and holds firm peaks and the sugar has fully dissolved (rub a little between your fingers to check it is not gritty).
- Whisk in the vanilla, then gently fold in the chocolate chips with a spatula using a few light strokes so you do not knock the air out of the mixture.
- Drop heaped teaspoons of the meringue onto the lined sheets, spacing them about 3 cm apart, or pipe neat mounds for a tidier finish.
- Bake for about 1 hour 15 minutes, until the cookies are dry, crisp and lift cleanly off the parchment without sticking.
- Turn off the oven, prop the door slightly open and leave the meringues inside to cool completely so they stay dry and crisp, then store in an airtight container.
