How to make it
- Place the butter in a small microwave-safe bowl and microwave in 10-second bursts until just melted, then let it cool for a minute so it does not cook the egg.
- Whisk the light brown sugar, caster sugar and vanilla extract into the melted butter until the mixture is smooth and glossy.
- Beat in the egg yolk until fully combined; using only the yolk keeps the cookie soft rather than cakey and avoids raw egg-white texture.
- Add the flour and salt and stir gently until no dry streaks remain, then fold in the chocolate chips without overmixing.
- Divide the dough between four microwave-safe mugs or ramekins and press each portion into an even flat round about 1.5 cm thick.
- Microwave one mug at a time on full power for 40 to 60 seconds, stopping as soon as the surface looks set but still slightly soft in the center, as it will firm up on standing.
- Let each cookie rest for 2 minutes before eating, as it will be very hot straight from the microwave; serve warm.
