Mincemeat Tart

How to make it

  1. Make the mincemeat first: peel, core and finely chop the apples, then combine in a bowl with the raisins, currants, suet, candied orange peel, candied citron, sugar, lemon zest and juice, mixed spice and brandy. Cover and leave to macerate for at least 2 hours, or overnight in the fridge for a deeper flavour.
  2. For the pastry, rub the cold butter into the flour and icing sugar with your fingertips until the mixture resembles fine breadcrumbs, then bind to a dough with the beaten egg, adding a teaspoon of cold water only if needed.
  3. Shape the dough into a disc, wrap it and chill for 30 minutes so it firms up and the gluten relaxes.
  4. Heat the oven to 190 C (375 F). Roll out two thirds of the pastry on a lightly floured surface and line a 20 cm tart tin, then spoon in the mincemeat and level it.
  5. Roll the remaining pastry and cut into strips, laying them over the filling in a lattice; press the edges to seal and trim away the excess.
  6. Brush the lattice with a little beaten egg or milk and bake for 30 to 35 minutes, until the pastry is golden and crisp and the filling is bubbling.
  7. Let the tart cool in the tin for 15 minutes so the filling sets, then dust with icing sugar and serve warm or at room temperature.
