How to make it

  1. In a small bowl, dissolve the sugar in the warm water, sprinkle over the dry yeast and leave for about 10 minutes until it turns foamy.
  2. In a large bowl combine the flour and salt, then pour in the yeast mixture along with 1 tablespoon of the olive oil and mix to a soft, slightly sticky dough.
  3. Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic, then cover and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Knock back the dough, divide it into 8 equal balls, coat each lightly with olive oil and rest them under a cloth for 15 minutes.
  5. On an oiled surface, flatten and stretch each ball with oiled hands into a very thin, almost translucent round, taking care not to tear it.
  6. Heat a dry or very lightly oiled non-stick pan over medium heat and cook each mofletta for about 1 minute per side, until small golden spots appear and the dough is just cooked through but still soft and pliable.
  7. Serve the warm pancakes stacked, spreading each one generously with butter and a drizzle of honey before rolling or folding to eat.
