How to make it

  1. Trim the morels and slice any large ones in half lengthwise, then swish them in a bowl of cool water to dislodge grit, lift them out and drain well on paper towels. Always cook morels thoroughly, as they are toxic when raw or undercooked.
  2. Melt the butter in a skillet over medium heat and add the sliced green onion tops, cooking gently for about 1 minute until softened but not browned.
  3. Add the morels and saute for 6 to 8 minutes, stirring often, until they have released and reabsorbed their moisture, are fully cooked through and smell nutty.
  4. Pour in the white wine, scrape up any bits from the pan and simmer briskly for 2 to 3 minutes until the liquid reduces by about half.
  5. Stir in the heavy cream, dried parsley, nutmeg and pepper, then lower the heat and simmer for 5 to 6 minutes until the morels are tender all the way through and the sauce lightly coats the back of a spoon.
  6. Taste and adjust with salt, then serve the sauce hot over steak, chicken, pork or pasta.
