How to make it

  1. Stir the sugar into the warm water, sprinkle over the dried active yeast, and leave for about 10 minutes until frothy.
  2. In a large bowl whisk together the bread flour, salt, and baking powder, then make a well in the centre and add the yeast mixture, yoghurt, and vegetable oil.
  3. Mix to a soft dough, then knead on a lightly floured surface for 8 to 10 minutes until smooth and elastic; cover and leave in a warm place for 1 to 1.5 hours until doubled in size.
  4. Knock back the dough, divide into four pieces, and roll each into a teardrop shape about 5 mm thick, then scatter over the black onion seeds and press them in lightly.
  5. Heat a heavy cast-iron pan or griddle over high heat until very hot, then lay a naan in the dry pan and cook for about 2 minutes until large bubbles form and the underside is charred in spots.
  6. Flip and cook the other side for 1 to 2 minutes until puffed and blistered, then brush with melted butter and keep warm wrapped in a clean towel while you cook the rest.
