How to make it

  1. Peel the potatoes and cut them into even bite-sized chunks so they cook at the same rate.
  2. Place the potatoes in a pot, cover with cold salted water, bring to a boil, then simmer for 12 to 15 minutes until just tender when pierced; drain well and let cool.
  3. Hard boil the eggs by simmering for 10 minutes until the yolks are fully set, then cool under cold water, peel, and chop; finely dice the onion.
  4. In a large bowl whisk together the mayonnaise, sweet pickle juice, dried parsley, celery seed, sugar and a pinch of salt until smooth.
  5. Add the cooled potatoes, chopped eggs and onion to the dressing and fold gently so the potatoes do not break apart.
  6. Taste and adjust the salt, then cover and chill for at least 1 hour before serving so the flavors meld.
