How to make it
- Stir the yeast and sugar into the warm water (about 40 C / 105 F) and let it sit for 5 to 10 minutes until foamy.
- Mix the flour and salt in a large bowl, then add the yeast mixture and the olive oil and stir to form a shaggy dough.
- Knead the dough on a floured surface for 8 to 10 minutes until smooth and elastic, then place it in an oiled bowl, cover and let it rise in a warm spot for about 1 hour until doubled.
- Punch down the dough, then stretch and press it into a thin round on a lightly oiled pizza pan or peel, building up a slightly thicker rim at the edge.
- Place a baking stone or steel in the oven and preheat to the highest setting, ideally 260 C / 500 F, for at least 30 minutes.
- Spread the tomato sauce thinly over the dough leaving the rim bare, sprinkle on the mozzarella and romano and finish with the oregano.
- Slide the pizza onto the hot stone and bake for 10 to 12 minutes until the crust is crisp and golden and the cheese is bubbling and lightly browned.
- Let the pizza rest for 2 minutes, then slice into large wedges and serve hot.
