How to make it
- Wash the assorted beef cuts thoroughly, scrubbing the tripe and cow foot well, then cut into bite-sized pieces and place in a large pot.
- Add half the chopped onion, the stock cubes, curry powder, thyme, and a little salt, then pour in just enough water to cover and bring to a boil.
- Simmer the tougher cuts such as cow foot and tripe for about 60 to 90 minutes until they begin to soften, adding the quicker-cooking liver only in the final 15 minutes; cook until every piece, including the offal and liver, is fully cooked through with no pink remaining and reaches at least 74 C, and the meat is fork-tender.
- Stir in the ground crayfish, the pepper soup spice mix, and the remaining chopped onion, then top up with the rest of the water to reach a brothy consistency.
- Add the whole or blended scotch bonnet to taste and let the soup boil gently for another 10 to 15 minutes so the flavors marry.
- Taste and adjust salt and heat, remembering the broth should be light, spicy, and aromatic rather than thick.
- Tear the scent leaves or parsley over the top, simmer for a final 2 minutes, then serve the pepper soup piping hot in deep bowls.
