How to make it

  1. Bring the water to a boil in a pot, add the noodles and crumble in one seasoning cube, then cook for 3 minutes until just tender; drain and reserve a few spoonfuls of the cooking liquid.
  2. Beat the eggs with a pinch of salt, heat a little of the oil in a wide pan over medium heat and scramble the eggs until fully set with no runny patches, then lift them out and set aside.
  3. Add the remaining oil to the pan and fry the diced onion and chopped red pepper for 2 to 3 minutes until softened and fragrant.
  4. Stir in the mixed vegetables and cook for another 3 minutes, then add the shredded roast chicken and stir until heated through.
  5. Add the drained noodles to the pan along with the soy sauce, the second crumbled seasoning cube and a splash of the reserved cooking liquid, tossing everything together.
  6. Fold the scrambled eggs back in, toss for 1 to 2 minutes until heated through, then taste and adjust the salt before serving hot.
