Nigerian Noodles

How to make it
- Bring the water to a boil in a pot, add the noodles and crumble in one seasoning cube, then cook for 3 minutes until just tender; drain and reserve a few spoonfuls of the cooking liquid.
- Beat the eggs with a pinch of salt, heat a little of the oil in a wide pan over medium heat and scramble the eggs until fully set with no runny patches, then lift them out and set aside.
- Add the remaining oil to the pan and fry the diced onion and chopped red pepper for 2 to 3 minutes until softened and fragrant.
- Stir in the mixed vegetables and cook for another 3 minutes, then add the shredded roast chicken and stir until heated through.
- Add the drained noodles to the pan along with the soy sauce, the second crumbled seasoning cube and a splash of the reserved cooking liquid, tossing everything together.
- Fold the scrambled eggs back in, toss for 1 to 2 minutes until heated through, then taste and adjust the salt before serving hot.
