Nigerian Potato and Fish Porridge

How to make it
- Peel the potatoes and cut them into roughly 3 cm chunks, then rinse and drain; clean the fish, cut it into thick pieces and season lightly with salt and pepper.
- Blend or finely chop the red onion and fresh chilli together to make a rough paste for the base of the porridge.
- Warm the palm oil in a large pot over medium heat, add the onion and chilli paste and fry for 2 to 3 minutes until softened and fragrant.
- Add the potatoes, water, crumbled seasoning cubes and black pepper, bring to a boil, then cover and simmer for about 12 to 15 minutes until the potatoes begin to soften.
- Lay the fish pieces gently on top, cover and simmer for a further 8 to 10 minutes until the fish is opaque and flakes easily and reaches at least 63°C (145°F).
- Using the back of a spoon, mash a few of the softer potatoes against the side of the pot to thicken the porridge to a creamy consistency, adding a splash more water if needed.
- Stir in the chopped spinach or garden egg leaves, taste and adjust the salt, then simmer for 2 minutes more until the greens are just wilted and serve hot.
