How to make it
- In a large bowl, whisk together the flour, sugar, instant yeast, nutmeg, and salt.
- Gradually pour in the warm water and warm milk, stirring with a spoon until you have a smooth, thick batter that falls slowly from the spoon, adding a little more water if it is too stiff.
- Cover the bowl with a clean towel or plastic wrap and let it rest in a warm spot for 1 to 1.5 hours until the batter has doubled and is bubbly.
- Pour the frying oil into a deep pot to a depth of about 3 inches and heat over medium heat to 350F (175C).
- Scoop up a small amount of batter with your fingers or a spoon and carefully drop it into the hot oil, frying a few at a time without crowding the pot.
- Fry for 4 to 6 minutes, turning the puff puffs so they brown evenly into golden balls that are cooked through in the center.
- Lift them out with a slotted spoon, drain on paper towels, and serve warm, optionally dusted with sugar.
