Nigerian Sausage Roll

How to make it
- In a large bowl whisk together the flour, baking powder, salt, nutmeg, and crumbled seasoning cube until evenly combined.
- Rub the chilled margarine into the flour mixture with your fingertips until it resembles coarse breadcrumbs, then add the cold water a little at a time and bring it together into a firm, smooth dough without overworking it.
- Wrap the dough and rest it in the refrigerator for 20 to 30 minutes while you cook the sausages in a pan until lightly browned on all sides, then let them cool.
- Preheat the oven to 190 C (375 F) and line a baking tray with parchment paper.
- Roll the dough out on a floured surface to about 5 mm thick, cut it into rectangles large enough to wrap each sausage, then place a sausage on each piece and roll it up, sealing the seam with a little beaten egg.
- Arrange the rolls seam-side down on the tray, brush the tops with beaten egg, and prick each one once or twice with a fork to let steam escape.
- Bake for 25 to 30 minutes until the pastry is golden and the sausages are fully cooked through to an internal temperature of at least 74 C (165 F), then cool slightly before serving.
