Nut Roast

How to make it
- Preheat the oven to 180 C (350 F) and grease a 900 g loaf tin, then line the base with a strip of parchment paper for easy removal.
- Finely chop the onion and cook it gently in the margarine over medium-low heat for 6 to 8 minutes until soft and translucent but not browned.
- Grind or finely chop the brazil nuts until they resemble coarse crumbs, then tip them into a large bowl with the breadcrumbs, thyme and mixed spice.
- Add the softened onion, lemon juice, vegetable stock and beaten egg to the bowl, season well with salt and pepper, and mix thoroughly into a moist, holding mixture.
- Press the mixture firmly into the prepared tin, levelling the top with the back of a spoon so it bakes evenly.
- Bake for 35 to 40 minutes until firm to the touch and golden brown on top, covering loosely with foil if it colours too quickly.
- Let the roast rest in the tin for 10 minutes to set before turning out, then slice and serve hot with gravy and roasted vegetables.
