Oatmeal Raisin Cookies

How to make it
- Preheat the oven to 180 C and line two baking sheets with parchment paper.
- Cream the softened butter with the brown and granulated sugars using a beater or wooden spoon for 2 to 3 minutes until light and fluffy.
- Beat in the egg, milk and vanilla until the mixture is smooth and fully combined.
- In a separate bowl whisk together the flour, baking soda, cinnamon and salt, then stir this into the wet mixture until just combined without overmixing.
- Fold in the oats and raisins until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the lined sheets, spacing them about 5 cm apart, and flatten each slightly.
- Bake for 11 to 13 minutes until the edges are golden but the centres still look soft, then let the cookies cool on the sheet for 5 minutes before transferring them to a rack.
