How to make it
- Pour the oatmeal stout into a small saucepan and simmer over medium heat until reduced to about 1/4 cup of concentrated liquid, then set aside to cool.
- Preheat the oven to 175 C (350 F) and line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides.
- Melt the butter and bittersweet chocolate together in a heatproof bowl set over a pan of barely simmering water, stirring until smooth, then remove and let cool slightly.
- In a large bowl whisk the eggs, sugar and vanilla for about 2 minutes until pale and thickened, then whisk in the cooled chocolate mixture and the reduced stout.
- Sift the flour, cocoa powder and salt over the wet mixture and fold gently with a spatula until just combined, then fold in the white chocolate chips.
- Scrape the batter into the prepared pan, smoothing the top, and bake for 28 to 32 minutes until the edges are set but a skewer inserted in the centre comes out with a few moist crumbs.
- Cool the brownies completely in the pan, then lift them out using the parchment and cut into squares for clean edges.
