How to make it
- Season the beef and tripe with the chopped onion, one stock cube and a little salt, then boil with a cup of water for about 20 minutes until they begin to soften and release their juices.
- Add the soaked stockfish and enough water to cover, and continue cooking for 20 to 25 minutes until all the meat is fully tender and cooked through.
- Meanwhile, boil the cocoyam in a separate pot for about 20 minutes until very soft, then peel and pound or blend into a smooth, slightly stretchy paste to use as the thickener.
- Add the palm oil, ground crayfish, yellow pepper and remaining stock cube to the meat pot and let it simmer for 5 minutes.
- Drop the cocoyam paste into the simmering broth in small lumps, then cover and cook for 10 to 12 minutes, stirring once or twice, until the lumps dissolve and the soup thickens.
- Taste and adjust the salt, then stir in the shredded oha leaves and simmer for just 3 to 4 minutes so they wilt but keep their colour.
- Turn off the heat and let the soup rest briefly, then serve hot with pounded yam or fufu.
