How to make it
- Stir the sugar into the warm water, sprinkle the active dry yeast over the top and let it stand for 5 to 10 minutes until foamy, which confirms the yeast is active.
- In a large bowl, combine the flour and salt, then make a well in the center and pour in the yeast mixture along with 2 tablespoons of the olive oil.
- Mix until a shaggy dough forms, then turn it out onto a floured surface and knead for 8 to 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover with a damp cloth and let it rise in a warm spot for about 1 hour, or until doubled in size.
- Punch down the dough, shape it into a round or oval loaf on a lined baking sheet, brush with the remaining olive oil and let it rise again for 30 to 40 minutes.
- Meanwhile, preheat the oven to 220°C (425°F), then slash the top of the loaf with a sharp knife.
- Bake for 25 to 30 minutes until the crust is golden and the loaf sounds hollow when tapped on the bottom, then cool on a rack before slicing.
