How to make it

  1. Season the assorted meat with the chopped onion, one crumbled seasoning cube, and a little salt, then boil with just enough water to cover until tender, about 40 to 50 minutes, keeping the stock in the pot.
  2. Meanwhile, peel and boil the cocoyams in a separate pot until very soft when pierced, about 20 minutes, then pound or blend them into a smooth, lump-free paste.
  3. Bring the meat and its stock back to a brisk simmer and add the palm oil, ground crayfish, fermented locust beans, blended chile pepper, and the remaining seasoning cube.
  4. Drop small lumps of the cocoyam paste into the simmering stock a little at a time, allowing each addition to dissolve so the soup thickens to a slightly drawing, smooth consistency.
  5. Let the soup simmer gently for 10 to 15 minutes so the thickener cooks through and the flavors marry, stirring occasionally to prevent sticking.
  6. Wash and shred the oha or bitterleaf leaves, stir them in, and cook for a final 3 to 5 minutes, then taste, adjust the salt, and serve hot with pounded yam or fufu.
