How to make it
- Season the assorted meat with the chopped onion, one crumbled seasoning cube, and a little salt, then boil with just enough water to cover until tender, about 40 to 50 minutes, keeping the stock in the pot.
- Meanwhile, peel and boil the cocoyams in a separate pot until very soft when pierced, about 20 minutes, then pound or blend them into a smooth, lump-free paste.
- Bring the meat and its stock back to a brisk simmer and add the palm oil, ground crayfish, fermented locust beans, blended chile pepper, and the remaining seasoning cube.
- Drop small lumps of the cocoyam paste into the simmering stock a little at a time, allowing each addition to dissolve so the soup thickens to a slightly drawing, smooth consistency.
- Let the soup simmer gently for 10 to 15 minutes so the thickener cooks through and the flavors marry, stirring occasionally to prevent sticking.
- Wash and shred the oha or bitterleaf leaves, stir them in, and cook for a final 3 to 5 minutes, then taste, adjust the salt, and serve hot with pounded yam or fufu.
