How to make it

  1. Whisk together the flour, sugar, salt, baking powder, baking soda, orange zest, and ground cardamom in a large bowl.
  2. In a separate bowl, beat the eggs, then whisk in the buttermilk, melted butter, and orange juice until combined.
  3. Pour the wet ingredients into the dry and stir just until no streaks of flour remain, leaving the batter slightly lumpy; do not overmix or the pancakes will be tough.
  4. Let the batter rest for 10 minutes so the leavening activates and the gluten relaxes.
  5. Heat a lightly greased griddle or non-stick pan over medium heat until a drop of water sizzles, then ladle on about 1/4 cup of batter per pancake.
