How to make it
- Preheat the grill or broiler to high and spread a thick layer of rock salt over a baking tray to hold the oyster shells level.
- Finely chop the bacon and fry it in a dry pan over medium heat until the fat renders and the pieces are just turning crisp, then drain on paper towels.
- In a small bowl, stir together the worcestershire sauce, tomato ketchup and black pepper to make the kilpatrick dressing.
- Nestle the oysters in their half shells into the rock salt so they sit flat, then spoon a little of the dressing over each one.
- Top each oyster with a generous scattering of the cooked bacon pieces.
- Place the tray under the hot grill for 4 to 6 minutes, until the dressing bubbles and the bacon crisps further and the oyster edges just begin to curl.
- Serve immediately with lemon wedges for squeezing over.
