How to make it

  1. Preheat the grill or broiler to high and spread a thick layer of rock salt over a baking tray to hold the oyster shells level.
  2. Finely chop the bacon and fry it in a dry pan over medium heat until the fat renders and the pieces are just turning crisp, then drain on paper towels.
  3. In a small bowl, stir together the worcestershire sauce, tomato ketchup and black pepper to make the kilpatrick dressing.
  4. Nestle the oysters in their half shells into the rock salt so they sit flat, then spoon a little of the dressing over each one.
  5. Top each oyster with a generous scattering of the cooked bacon pieces.
  6. Place the tray under the hot grill for 4 to 6 minutes, until the dressing bubbles and the bacon crisps further and the oyster edges just begin to curl.
  7. Serve immediately with lemon wedges for squeezing over.
