Palm Oil Stew with Meat and Fish

How to make it
- Season the assorted meat with one chopped onion, a seasoning cube and a little salt, then boil with just enough water to cover for 25 to 35 minutes until tender, keeping the stock.
- Meanwhile, soak the dried or smoked fish in warm water for 10 minutes, then rinse, debone carefully and break into chunks.
- Blend the red bell peppers, fresh cayenne peppers and the second onion to a coarse paste with a splash of water.
- Heat the palm oil in a wide pot over medium heat for 2 to 3 minutes until it is fluid and clear but not smoking, then add the blended pepper paste and the iru and fry for 8 to 10 minutes, stirring, until the raw smell goes and the oil rises.
- Add the cooked meat along with its reserved stock, stir to coat, and simmer uncovered for 10 minutes so the flavours marry.
- Gently fold in the fish chunks, add the remaining seasoning cube and salt to taste, and simmer a further 5 to 8 minutes, being careful not to break up the fish.
- Adjust the seasoning and consistency, then serve the stew hot with boiled white rice, yam or pounded yam.
