How to make it
- In a large bowl, whisk together the flour, sugar, baking powder and salt until evenly combined.
- Melt the butter and let it cool slightly, then in a separate jug whisk the egg, milk, melted butter and vanilla until smooth.
- Pour the wet ingredients into the dry and stir just until no dry flour remains; a few small lumps are fine, as overmixing will make the pancakes tough.
- Let the batter rest for 5 to 10 minutes while you heat a non-stick frying pan or griddle over medium heat and lightly brush it with the oil.
- Pour roughly 60 ml of batter per pancake into the pan and cook until bubbles form across the surface and the edges look set, about 2 minutes.
- Flip each pancake and cook the second side for 1 to 2 minutes until golden brown and cooked through in the centre.
- Keep the cooked pancakes warm in a low oven while you repeat with the remaining batter, then serve hot with butter and maple syrup.
