How to make it

  1. In a large bowl, whisk together the flour, baking powder, sugar and salt until evenly combined and no lumps remain.
  2. In a separate jug, stir together the soy milk, vegetable oil and vanilla extract.
  3. Pour the wet ingredients into the dry and whisk just until a smooth, pourable batter forms; a few small lumps are fine, so do not overmix. Let the batter rest for 5 minutes to thicken slightly.
  4. Heat a non-stick frying pan or griddle over medium heat and lightly brush with oil. The pan is ready when a drop of water sizzles on contact.
  5. Ladle about 60 ml of batter per pancake into the pan, leaving space between each. Cook for 2 to 3 minutes until bubbles form across the surface and the edges look set.
  6. Flip each pancake carefully and cook the second side for 1 to 2 minutes until golden brown and cooked through in the centre.
  7. Transfer to a warm plate and repeat with the remaining batter, re-oiling the pan lightly between batches. Serve warm with maple syrup or fresh fruit.
