How to make it
- Whisk the flour, baking powder, salt and sugar together in a large bowl.
- Melt the butter, then in a separate jug beat the eggs with the milk and 25 g of the melted butter until well combined, reserving the rest for the pan.
- Pour the wet ingredients into the dry and whisk just until smooth, then let the batter rest for 5 to 10 minutes so the bubbles settle.
- Heat a non-stick frying pan over medium heat and brush lightly with a little of the remaining butter.
- Pour in about a ladleful of batter per pancake and cook for 1 to 2 minutes until bubbles form on the surface and the edges look set.
- Flip and cook the other side for a further 1 to 2 minutes until golden, then keep warm while you cook the rest, buttering the pan between batches.
- Stack the pancakes on warm plates and drizzle generously with honey just before serving.
