How to make it

  1. Pat the chicken pieces dry and season them all over with salt.
  2. Heat the olive oil in a large heavy pot over medium-high heat and brown the chicken in batches on all sides, then transfer to a plate.
  3. Lower the heat to medium, add the finely chopped onions to the same pot and cook for 8 to 10 minutes until soft and golden, then stir in the minced garlic for 30 seconds.
  4. Pull the pot off the heat, stir in the sweet paprika so it does not scorch, then return to the heat and pour in the chicken stock, scraping up the browned bits.
  5. Return the chicken and any juices to the pot, cover and simmer gently for 35 to 40 minutes until the chicken is tender and cooked through to an internal temperature of 165 F (74 C).
  6. Whisk the sour cream, heavy cream and flour together in a bowl, then temper in a ladle of the hot cooking liquid before stirring the mixture back into the pot.
  7. Simmer uncovered for 3 to 4 more minutes until the sauce thickens slightly, taste and adjust the salt, then scatter with chopped parsley and serve over egg noodles or dumplings.
