How to make it

  1. Preheat the oven to 350°F and grease an 8-inch square baking pan or line it with parchment.
  2. Peel and core the apples, cut them into small cubes, and toss them with the topping sugar and the cinnamon in a bowl.
  3. In a large bowl, beat the eggs with the granulated sugar until pale and slightly thickened, then beat in the oil in a steady stream.
  4. Gently fold in the matzo cake meal and salt just until no dry streaks remain, being careful not to overmix.
  5. Fold in most of the cinnamon apples and the chopped walnuts, then pour the batter into the prepared pan and scatter the reserved apples over the top.
  6. Bake for 40 to 45 minutes until the cake is golden and a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for at least 15 minutes before cutting into squares and serving.
