How to make it

  1. Whisk the flour and 1/2 teaspoon of the salt in a bowl, then cut in the shortening with a pastry blender until the mixture resembles coarse crumbs.
  2. Beat the egg, vinegar, and ice water together, drizzle into the flour, and mix just until the dough holds together; divide in two, wrap, and chill for 30 minutes.
  3. Blanch the peaches in boiling water for 30 seconds, slip off the skins, then slice the flesh and toss with the sugar, cornstarch, cinnamon, lemon juice, and remaining salt.
  4. Roll out one disk of dough and line a 9-inch pie plate, then spoon in the peach filling and dot the top with the butter.
  5. Roll out the second disk, lay it over the filling, trim and crimp the edges to seal, and cut a few steam vents in the top crust.
  6. Bake in a preheated 425 degree F oven for 15 minutes, then reduce the heat to 375 degrees F and bake for another 35 to 40 minutes until the crust is golden and the filling bubbles.
  7. Cool the pie on a rack for at least 2 hours before slicing so the filling can set.
