How to make it

  1. Preheat the oven to 175°C (350°F) and lightly grease a small baking dish.
  2. Drain the pineapple chunks well, reserving a few tablespoons of the juice.
  3. In a bowl, toss the pineapple chunks with the sugar and flour until evenly coated, then stir in the reserved juice and the shredded cheddar cheese.
  4. Spread the pineapple and cheese mixture evenly into the prepared baking dish.
  5. Melt the butter, toss it with the coarsely crushed saltines until they are well moistened, then scatter the buttery crumbs over the top of the pineapple.
  6. Bake uncovered for 25 to 30 minutes until the topping is golden and crisp and the filling is bubbling at the edges.
  7. Let the dish rest for about 10 minutes to set slightly before serving warm as a sweet and savory side.
