How to make it
- In a large bowl, whisk the warm water with the instant yeast and sugar and let it sit for 5 minutes until lightly foamy.
- Add the durum wheat flour, salt and vegetable oil, then mix until a shaggy dough forms and knead on a lightly floured surface for about 8 to 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover, and let it rise in a warm spot for about 1 hour until doubled in size.
- Punch down the dough, divide it into 8 equal pieces, shape each into a ball and let them rest covered for 15 minutes, then roll each ball into a round about 5 mm thick.
- Place a baking stone or heavy inverted tray in the oven and preheat to 245 C, letting it heat for at least 20 minutes so it is thoroughly hot.
- Bake the rounds two or three at a time directly on the hot surface for 3 to 4 minutes until they puff into balloons, then transfer to a clean towel and cover so they stay soft as they cool.
