How to make it

  1. In a large bowl, whisk the warm water with the instant yeast and sugar and let it sit for 5 minutes until lightly foamy.
  2. Add the durum wheat flour, salt and vegetable oil, then mix until a shaggy dough forms and knead on a lightly floured surface for about 8 to 10 minutes until smooth and elastic.
  3. Place the dough in an oiled bowl, cover, and let it rise in a warm spot for about 1 hour until doubled in size.
  4. Punch down the dough, divide it into 8 equal pieces, shape each into a ball and let them rest covered for 15 minutes, then roll each ball into a round about 5 mm thick.
  5. Place a baking stone or heavy inverted tray in the oven and preheat to 245 C, letting it heat for at least 20 minutes so it is thoroughly hot.
  6. Bake the rounds two or three at a time directly on the hot surface for 3 to 4 minutes until they puff into balloons, then transfer to a clean towel and cover so they stay soft as they cool.
