How to make it

  1. Stir the yeast and sugar into the lukewarm water, which should feel just warm to the touch at about 40 C (105 F), and let it stand for 5 to 10 minutes until foamy to confirm the yeast is alive.
  2. In a large bowl, whisk the flour and salt together, then make a well in the center and pour in the yeast mixture and the vegetable oil.
  3. Stir until a shaggy dough forms, then turn it onto a lightly floured surface and knead for 8 to 10 minutes until smooth, elastic and slightly tacky, adding a little flour only if it sticks badly.
  4. Shape the dough into a ball, place it in a lightly oiled bowl, turn to coat, cover with a damp cloth, and let it rise in a warm spot for about 1 to 1 1/2 hours until doubled in size.
  5. Punch down the risen dough to release the gas, divide it into two equal pieces for two pizzas, and let them rest under the cloth for 10 minutes so the gluten relaxes.
  6. Stretch or roll each piece into a round on a surface dusted with cornmeal, working from the center outward and leaving a slightly thicker rim for the crust.
  7. Top as desired and bake on a preheated stone or tray at the highest oven setting, around 250 C (475 F), for 10 to 12 minutes until the crust is puffed and golden.
