Pizza Soup

How to make it
- Chop the bacon and ham into small pieces, dice the onion and green pepper, slice the mushrooms and mince the garlic.
- Heat the olive oil in a large pot over medium heat, add the bacon and cook until the fat renders and it begins to crisp, about 4 minutes.
- Add the onion, green pepper and mushrooms and cook for 5 to 6 minutes until softened, then stir in the garlic and oregano and cook for 1 minute until fragrant.
- Stir in the chopped tomatoes, stock, ham and sweetcorn, bring to a boil, then reduce to a simmer and cook gently for 15 minutes so the flavours meld.
- Whisk the cornstarch with 2 tablespoons of cold water until smooth, stir it into the soup and simmer for 2 to 3 minutes until slightly thickened.
- Season to taste with salt and black pepper, remembering the bacon and ham are already salty.
- Ladle the hot soup into bowls, top each with a generous handful of mozzarella and let it melt, then serve at once with crusty bread.
