How to make it

  1. Chop the bacon and ham into small pieces, dice the onion and green pepper, slice the mushrooms and mince the garlic.
  2. Heat the olive oil in a large pot over medium heat, add the bacon and cook until the fat renders and it begins to crisp, about 4 minutes.
  3. Add the onion, green pepper and mushrooms and cook for 5 to 6 minutes until softened, then stir in the garlic and oregano and cook for 1 minute until fragrant.
  4. Stir in the chopped tomatoes, stock, ham and sweetcorn, bring to a boil, then reduce to a simmer and cook gently for 15 minutes so the flavours meld.
  5. Whisk the cornstarch with 2 tablespoons of cold water until smooth, stir it into the soup and simmer for 2 to 3 minutes until slightly thickened.
  6. Season to taste with salt and black pepper, remembering the bacon and ham are already salty.
  7. Ladle the hot soup into bowls, top each with a generous handful of mozzarella and let it melt, then serve at once with crusty bread.
